Simple Cardamon Pear & Walnut Crumble

This is a great work from home proof simple snack/dessert- quick to prepare and super tasty



Crumble:

  • 100 grams almond meal

  • 30 grams cold ghee (for a vegan version use the same amount coconut oil)

  • 15 grams jaggery (or brown coconut sugar)

  • ¼ tsp vanilla essence

  • Pinch of salt

  • 10-15 walnuts roughly chopped (preferably soaked over night)


Pear & apple filling:

  • 1 large pear chopped into 2cm cubes

  • 1 red apples chopped into 2cm cubes

  • ½ tsp ground cardamon

  • ½ tsp ghee (for a vegan version use the same amount coconut oil)


How to prepare?

Heat the oven to 180 degrees celsius (fan forced). In a bowl, mix the crumble ingredients together by hand, leave the walnuts to be mixed in last. Heat the ghee in a pan and sautee the apple & pears on a medium heat with the cardamon for around 5 mins. Remove apple & pears from the heat and add to a small glass heat/oven proof dish. Crumble the almond/walnut mixture on top on the pears, then place in the oven for about 20 mins. Leave to cool for at least 5-10 mins before eating and enjoy!


  • Tip: choose sweet pears- I used Doyenne du comice

  • Extra tip: when making the vegan version baking time will be less (around 15 mins)
