Usually some time between 3-4 in the afternoon I am in need of a small pick me up snack- something that is filling enough to get me to dinner but not so big that its another meal. That’s when I usually grab one or two of these goodies- the dates provide slow releasing energy and the combination of both dates and almonds create a satisfying fullness. The addition of the cardamom not only adds flavor but also aids in stimulating your digestion. Watch out though as these are dangerously easy to make!
Ingredients
100 grams soft medjoul dates
80 grams ground almonds (almond meal)
½ tsp cardamom
¼ tsp rose water
40 grams dark chocolate (many vegan friendly options available)
15 grams coconut oil
Pinch of salt
How to prepare
Add all ingredients to a food processor and blend everything together for about a minute. Take out the mixture from the blender and in a bowl massage together until you get a dough like structure (it will also start to feel oily, which is perfect). Divide into smaller portions (if you like, you can weigh them so that you get equal portions- i've done this before with about 10-12 grams per ball), then roll these each into balls. The balls should be smooth and slightly oily.
Melt the chocolate and coconut oil in a glass bowl over some boiling water (bain marie)- the bowl should not touch the water. Take the mixture off of the heat and add a pinch of salt. Then dip each of the almond date balls into the chocolate- once dipped, lift each ball out using two forks (this way any excess chocolate drips off) and place gently onto a plate lined with baking paper.
Place in the fridge for at least an hour (until the chocolate shell is set). Take out of the fridge about 30 mins before eating. The enjoy!
Tip: if you only have dried dates you can soak these for at least 15 mins in warm water, drain the follow the steps mentioned above
Extra tip: if you would like a less sweet version, it’s also delicious to have without the chocolate topping
